Ingredients

• 1 Leg of lamb (bone in) about 6 1/2 pounds
• 6 garlic cloves
• ¼ cup spicy brown mustard
• 1/3 cup extra-virgin olive oil
• 2 tablespoons packed brown sugar
• 1/8 teaspoon cayenne pepper
• 1 teaspoon kosher salt
• 1 teaspoon coarse ground black pepper

Instructions

1. Load smoker with your favorite wood or pellets. Preheat smoker to 225 degrees.
2. Place lamb on a sheet pan and set aside.
3. Combine garlic, mustard, olive oil, brown sugar, cayenne pepper, salt and pepper in a food processor. Blend thoroughly.
4. Spread mixture evenly over leg of lamb.
5. Place lamb on rack in smoker and cook for about 1 ½ hours or until an internal temperature of 110 degrees.
6. Transfer lamb to a preheated grill on medium high heat. Sear lamb evenly on all sides until internal temperature of 140 degrees. Remove lamb from grill and let rest 10 minutes prior to slicing.
