No New Year’s Day is complete at my house without a serving black eyed peas. “What the heck you ask?” Yes. I do realize that it is February however, if you visit the grocery store on the 2nd or 3rd of January you can find great discounts on fresh black eyed peas. I buy up containers of them and place them in my freezer. Peas cook quickly too! Today I brought a pot of water to boil and then added the peas. I let it come back up to a rolling boil and then reduced the heat to a gentle boil and let it cook about 10 minutes. Next I drained the peas in a collander and set them aside. In the empty pot I sautéed a little garlic and onion in a tablespoon of olive oil for about 5 minutes. Next I added the peas, about 3 cups of water and one bunch of chopped collard greens. I let this simmer for about an hour stirring occasionally. I finished it off with a little salt and pepper. Yummy!
